In 2012, Costa founded sustainable condiments brand Rubies in the Rubble, which has led the way in making ketchups, mayo and relishes from surplus fruit and vegetables.
She has achieved many accolades, including Best Young Entrepreneur at the Investec Food and Drink Entrepreneur of The Year 2014 Awards and the 2014 Veuve Clicquot New Generation Award. She appeared in Marie Claire’s Women at the Top list in the same year and received Good Housekeeping’s Food Hero Award in 2013.
Rubies’ products are stocked by UK businesses including Waitrose, Ocado, Morrisons and Marriott.
To date, Rubies claims to have saved more than 400 tonnes of surplus and the equivalent of 350 tonnes of CO2 emissions. It has created new processing systems to enable the use of surplus in mainstream manufacturing.
